Description:
Traditionally this coffee is made very very strong. It can even be very strong for the ardent coffee lover. Some people refer to it being as thick as mud, as you will always find this effect in the bottom of an Ibriki. The coffee is ground to a powder very similar to flour and this alone could be the difference between a good cup and bad cup of Greek coffee.
How to:
- Boil water in a traditional Ibriki.
- Once boiling reduce heat and add 7 grams of specially ground coffee for each cup required. Take care as coffee may boil over.
- Stir coffee in Ibriki to mix well.
- Let coffee boil up to rim three times on low heat. Take care as coffee may boil over.
- After the third boil turn off and let the coffee settle for about two minutes.
- Serve in traditional cups or small short black cups or demitasse glass.
